The Grey Wolf Action Quebec Bleu Macarons
This is just a fun bake in honour of the Action Quebec Bleu logo described in The Grey Wolf. A blue and green yin yang with a leaping fish in the middle. This isn’t a significant detail in the story at all, but when it was described in the book, the image stuck.
The green macarons are filled with a pistachio ganache ring and a pistachio praline centre, while the blue macarons are filled with a yuzu ganache ring and a passionfruit centre. The greens have a deep, nutty flavour and the blues have a bright, vibrant punch that balances out the sweetness of the macaron shells. Both are delicious!

Recipe:
Macaron shells:
100g egg white
100g fine granulated sugar
100g almond flour
100g powdered sugar
Sift together the almond flour, black sesame powder and powdered sugar and add in two batches to the whipped egg whites/sugar. The meringue should be whipped to stiff peaks. Mix all ingredients to appropriate consistency where batter melts back into mass after 20 seconds. Bake at 325C for 10-20min.
Pistachio ganache
178g high quality white chocolate (we used Valhrona Opalys)
200ml pistachio paste
100ml 36% heavy cream
Mix the pistachio paste with the melted chocolate with an immersion blender, add the heavy cream and emulsify the solution. Let sit overnight in the refrigerator.
Pistachio praline
100g granulated sugar
200g pistachios
5ml grapeseed oil
Caramelize the sugar until a deep golden brown. Mix in pistachios and allow to cool completely. Blend in a food processor until smooth or slightly textured, adding oil to reach the consistency of choice.
Passionfruit cream curd
3/4 cup passionfruit juice
1 cup granulated sugar
2 tablespoons lemon zest
4 eggs
2 egg yolks
1/4 cup butter
Yuzu ganache
178g high quality white chocolate (we used Valhrona Opalys)
100ml yuzu juice
200ml 36% heavy cream
2g gelatin
Mix the pistachio paste with the melted chocolate with an immersion blender, add the heavy cream and emulsify the solution. Let sit overnight in the refrigerator.
